A new rooftop resto-bar with panoramic views of St Julian’s has opened up at Hyatt Regency Hotel Malta.

Seed Rooftop promises an unmistakably Mediterranean experience, with a shifting vibe and atmosphere that means you can head there for lunch and stay on for a few cocktails in the evening.

Its food is Mediterranean-based but with several global influences, and is certainly designed for sharing.

Its lunch menu items include pita with grilled lemon sumac chicken, tempeh & tortilla nachos, and traditional Maltese ftira.

Its evening dishes include charred octopus and braised pork neck skewers, wagyu beef sliders, squad ink arancini, and sfineg tal-incova.

“Seed Rooftop is the moment the day becomes the evening,” said Hyatt Regency Malta General Manager Adrian Attard.

“We wanted to create a space where guests don’t feel the need to be anywhere else – where the view, the food and the atmosphere all tell the same story.”
