Malta meets Melbourne as Noni chef takes local flavours Down Under

Maltese Michelin-starred chef Jonathan Brincat, from Valletta restaurant Noni, showed off his skills at the Melbourne Food & Wine Festival. 

Over four nights, Chef Brincat collaborated with Maha, a Melbourne-based Middle Eastern restaurant owned by Shane Delia, a renowned Maltese-Australian chef.

He brought the island’s rich traditions and the modern, influential flavours of Noni here to Melbourne through a five-course degustation,” Maha said.

“Thank you to each and every one of our guests who filled every table and embraced these special nights of Maltese dining.”

Chef Delia has often expressed pride in his Maltese roots. In fact, he recently launched a Australian TV show called Shane Delia’s Malta, which focuses on Maltese heritage and dishes, in which he travelled to Malta to try out local food and speak to cooks, artisans, producers and families.
