This ancient cave has been a place of refuge and transformation for generations. In 1942, during World War II, locals carved an underground shelter to escape the bombings. The years ‘1942’ and ‘1945’ are still etched into the stone walls, reminders of the mothers, fathers, and children who sought safety here. As you dine, you can feel their presence in the air – a sense of resilience and quiet strength.
After the war, the cave was used as part of ‘il-kerreja’, a shared living space for the community. Some say it even served as a farm, utilizing the natural warmth of the cave. But in 1962, the space transformed into one of Rabat’s first restaurants. A visionary local, inspired by his travels abroad, brought live music and a wine bar to the village, creating a new dining experience that would shape the future of Rabat’s food scene.
Today, Grotto Tavern is a Michelin Recommended restaurant, but it’s not just the accolades that define it. What sets it apart is the clarity of vision and execution, where fine dining is rooted in authenticity and elevated through innovation.
At just 23, Head Chef Nikolai Abela delivers a cuisine that is modern, exacting, and deeply personal. Influenced by Nouvelle Cuisine, his dishes focus on purity of flavour, balance, and finesse. Local, seasonal ingredients are transformed through thoughtful techniques – slow infusions, delicate reductions, unexpected fermentations – into compositions that are restrained yet layered, bold yet elegant.

This dedication to fresh, seasonal produce is at the heart of everything served at Grotto Tavern. Ingredients are sourced directly from passionate local farmers in Żebbuġ, Naxxar, Rabat, Burmarrad, and Żebbiegħ. By collaborating closely with these growers, the restaurant ensures every dish – whether part of the tasting menu or à la carte – is rich in flavour, rooted in sustainable practices, and reflects Malta’s rich agricultural heritage in every bite.
