Listen up foodies, because boy, do we have a treat for you! This weekend, on Saturday 29th June, Michelin-starred chef Paolo Barrale will be in Malta for a one-night only event in collaboration with Palazzo Parisio’s Executive Chef Ciro Salatiello and his kitchen brigade.

On the local public holiday evening, patrons will have the opportunity to dine in the luxurious gardens of Naxxar’s gorgeous palazzo, feasting on local delicacies with a Michelin twist. We’re drooling just thinking about it!

The mastermind chef

Like many top chefs, Chef Barrale was inspired by his parents at a very young age, developing a passion for cooking while helping in the family-run pasta-making business in Sicily. The renowned chef has amassed years of experience since then, working with three-star Michelin chef Heinz Beck at La Pergola and L’altro Mastai in the heart of Rome, and La Torre del Saracino in Vico Equense in Naples for three years. This is where he really cultivated and refined his culinary philosophy, combining northern and southern Italian cuisine.

Chef Barrale was awarded the coveted Michelin star in 2004, and today, the chef acts as a consultant, travelling the world and collaborating with international chefs. #Goals or what?

A spectacular experience at Palazzo Parisio

Chef Barrale has developed a five-course meal priced at €100 that brings out the best ingredients available locally, with a sprinkle of the exotic. Locally sourced red prawns, fresh clams and strawberries meet ingredients like black lime, hibiscus and dried roses, guaranteeing dishes that are just bursting with flavour. And for the wine lovers (guilty!), every dish is paired expertly with wines to take you on a culinary journey that is second to none.

The scrumptious menu

1. Crispy octopus and potato foam

2. Mediterranean red prawn tartare with hazelnut Chantilly, red apple and hibiscus infusion

3. Carnaroli risotto with clams, provola and black lime

4. Amberjack fillet with mussel and parsley mayonnaise

5. Herb-crusted loin of lamb with mint-scented gravy, miso-glazed capsicum and aubergines

6. Chef’s revisited variation of strawberries and cream

7. Coffee and petit fours
