‘Bajd mimli’! How about a Maltese twist on this classic Christmas lunch appetiser?
Capers, Maltese sausage, or even chillies!

Now’s about the time that designated chefs for the day will be planning their Christmas lunch menus. If you’ve been tasked with the job are looking to add a local twist to your appetisers, we’ve got you covered!

Devilled eggs, also known as stuffed eggs, curried eggs or ‘bajd mimli’ in Maltese, are a classic holiday starter. They consist of hard-boiled eggs that are peeled, halved, with the yolk removed, and then mixed with ingredients like mayonnaise, mustard, and spices such as paprika, cinnamon, or curry powder.

But feel free to get creative with your toppings! Apron & Whisk, known for their take on traditional Maltese recipes, offer a delicious twist on this European dish. In their recipe, they use Maltese capers – renowned for their unique taste and quality – to add a little Mediterranean zest to the devilled eggs, making them a perfect local touch.

If capers aren’t your thing, why not try crumbled Maltese sausage or, for a bit of spice, locally grown chilli peppers? The possibilities are endless!

How do you like your devilled eggs?
