Devilled eggs, also known as stuffed eggs, curried eggs or ‘bajd mimli’ in Maltese, are a classic holiday starter. They consist of hard-boiled eggs that are peeled, halved, with the yolk removed, and then mixed with ingredients like mayonnaise, mustard, and spices such as paprika, cinnamon, or curry powder.

But feel free to get creative with your toppings! Apron & Whisk, known for their take on traditional Maltese recipes, offer a delicious twist on this European dish. In their recipe, they use Maltese capers – renowned for their unique taste and quality – to add a little Mediterranean zest to the devilled eggs, making them a perfect local touch.
