For those of you who have stumbled upon this article wondering what the heck this weird-looking, dome shaped blob covered in cream is, we gotchu. Prinjolata is a local delicacy made with pine nuts and pops up around the time of Carnival. And like every other Maltese sweet recipe, you’ll find different variations of it: filling and decorations. But that’s what makes it so yummy!

“This recipe is based on my mum’s version as to me, nothing beats sinking my teeth into a delicious dense mix of divinity. Nevertheless, this recipe contains less than half the calories! In its traditional form, this is probably one of the unhealthiest Maltese food staple, which naturally urged me to give it a healthy makeover.” We kinda agree, too.

Geraldine does warn that it does differ slightly in taste, it isn’t low calorie (each slice contains about 350 calories based on 12 servings – sacre bleu!) and if made from scratch, it does require an amount of time to make, but she promises “the result will be totally worth it.” We’ll take your word for it, Geraldine!
