The food here is perfectly complemented by the ambiance. Flanked by fairy-lit olive trees, Hilton’s Gazebo Restaurant is located near the luxurious hotel’s upper pools, overlooking breath-taking coastal views, with a delightful setting that exudes Mediterranean charm.

Letting us in on the different sources of inspiration behind the new menu, Head Chef Andre Spiteri explains, “the menu offers a range of dishes which incorporate a mix of modern and classic cooking techniques. As much as possible, we have sourced seasonal and local ingredients throughout the menu, ranging from fish and pork to vegetables.” 

The inspiration behind the Gazebo menu stems from Mediterranean and French cuisine, he continues, while the starters also have a touch of Asian influence.

“When it comes to the grills, these are inspired by the parilla Argentinian grill which is more commonly translated into asado,” he says, explaining that “gaucho grills, parrillas and asados come from the Argentinian way or tradition of grilling meat over an open fire, and are often used for high heat or low and slow cooking. “

Apart from its delectable array of food options, the Gazebo also offers a tempting list of cocktails, wine and champagne, which is perfect for a pre-dinner drink as you relax into the Mediterranean dolce far niente lifestyle, with nothing ahead but a pleasant evening of great food under the stars.
