This Executive Chef, who has taken over the kitchens at the newly-opened Urban Valley Resort and Spa, is a firm believer of going back to basics and doing things in-house. Matthew’s Insta feed reflects his love of curing and smoking meat and fish, using a blend of well-thought out ingredients.
3. Nicole Pisani
No longer actually based in Malta, Nicole Pisani has made the headlines – and racked up attention – through her work at Yotam Ottolenghi’s restaurant Nopi and running a school kitchen and food education programme at Gayhurst Primary School Hackney. Her forthcoming book – Salt Butter Bones – packs 100 recipes, together with images from her home country, showing people that, yes, they can master the art of cooking.
4. JP Debono
JP Debono, one of the owners of Danny’s café which opened last year in the unlikely location of Mriehel, has quickly established a reputation for creating healthy, fresh and vibrant food. He opened the place with his brother – Danny is their father, who often helps out in the eatery – and many have made their way to savour their deli-style dishes.
5. Marilu Vella
For those in-the-know, Marilu Vella is not an unfamiliar name. The creator of Pastizzi Gourmet – an outfit creating pastizzi, that traditional Maltese snack, in all flavours and tones such as these packed with lemon curd, strawberry and lemon balm – delights her Insta followers with images of mouth-watering treats. And she’s set to open a tea room next year too! Watch this space.
